The Seminar on Concentrated Evil
Great cocktails are conceived with the idea of building flavor. Whether ingredients are complimenting, accentuating or contrasting flavors, there is a level of understanding that goes into the composition of a cocktail. To stand up to 40+ proof booze, one needs to fight fire with fire. To bring out the best in a spirit one must use pure concentrated evil. In The Seminar on Concentrated Evil, Jason Kosmas will discuss the components that make up a cocktail by analyzing their flavor profiles. By abandoning conventional trappings, Jason will teach how to look at a cocktail through the prism of taste. Whether a base spirit, liquor, juice, fruit or sweetener, he will demonstrate the most effective way to add richness, life and pop to cocktails. Kosmas will also reveal the mentality behind making homemade ingredients as an opportunity to add depth and complexity. Cocktails that best illustrate these examples will be served to fill your mind and warm your soul.
A little about Mr. Kosmas: After working at Tavern on the Green and honing his skills in making classic cocktails, Jason busted into the cocktails scene and made a name for himself in 1999 while at Pravda by receiving 1st Place in the Independent Cocktail Awards sponsored by Food and Wine Magazine. He later started Cocktail Conceptions, a beverage consulting company, and gained even more notoriety in 2004 when he became principle bartender and co-owner of New York’s famed Employees Only. He is also a partner in Macao Trading Co. and has moved to Dallas to work in such places as NeighborHood Services, Bolsa, and currently works at Marquee Grill & Bar as Beverage Director.
